elouan pinot noir 750ml 2015The delicate nature of Oregon Pinot Noir requires a soft hand in the cellar. The clusters were 100% destemmed with a few select lots having small amounts of stems added back to the fermenter for phenolic augmentation. The must underwent an extended cold soak, ranging from five days to two weeks, and during fermentation both punch-down and pump-over techniques were utilized. We monitor the separate lots and tailor the extraction methods to the needs of each one. We find this style of reactive winemaking is the best way to coax the optimal terroir qualities from Pinot Noir, truly exemplifying the prime coastal vineyards from where it is sourced. The wine was aged for ten months in a mix of new and seasoned French oak and racked upon completion of malolactic fermentation.

Ready to drink, its long chalky finish will assist its 5 years ageing potential.

tremenda monastrell 750ml 2014The name "La Tremenda" references the name of the vineyard from which the grapes for this wine are grown and handharvested. Made entirely from mature Monastrell vines, carefullyraised in the harsh, arid landscape of Alicante. "The vine must suffer..." and here it does. Bright ruby-red in color, this wine shows expressive notes of fresh black cherries and red berries mingled with hints of sweet spice, toast and cocoa. On the palate, this accessible red shows silky texture, liveliness and long length. Pair it with pork chops Normandy, Kobe beef, or parmesan-crusted asparagus tips.
palmetto cayuga 750ml 2014The Cayuga White grape is a cross between the Seyval Grape and the Schuylar grape. It is a relative newcomer, having only been available since the early 1970's. Cayuga makes a soft, light fruity, crisp semi-dry (or dry) wine that is extremely palatable. Often subtle flavors of apricot, melons, or peach can embody the wine. Reminiscent of "traditional", more well-known wines such as the Sauvignon Blanc, Pinot Grigio, or a "light" White Riesling. Cayuga White makes a very nicely balanced, pleasant white table wine. It can be served with appetizers, or with any main course that goes with a light white wine.

This is a medium-bodied, easy-drinking wine.
